These simple, easy, delicious biscuits are a great addition to any morning before heading out to wander the wilderness! 6 ingredients, and 20 minutes preparing and 20 minutes baking and you will have delicious biscuits. Or if you are in a hurry you can freeze these ready to cook or pre-cooked. They warm up well in a toaster oven for mornings with very little time or that early morning traveling to your favorite hiking destination. Watch this recipe be prepared in this link.

Ingredients

  • 4 1/2 Cups All Purpose flour
  • 6 1/2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3/4 teaspoon Baking Soda
  • 1 Stick Frozen Butter
  • 1 1/2 Cups Buttermilk (Substitute 1 1/2 Cups Milk add 1 Tablespoon Vinegar)

Additional Items Needed

  • 1 large bowl
  • Cutting Board
  • Kitchen Knife
  • Large mixing spoon/spatula
  • Biscuit Cutter (Substitute a drinking glass)
  • Dough Blender [I didn’t know what this was called- its not motorized] (Or Something to ‘cut’ the frozen butter into dry ingredients – a heavy duty fork)

Delicious Recipe

  • In a large mixing bowl mix the dry ingredients together.
  • Cube the frozen stick of butter into pea sized cubes.
  • Cut the now cubed butter into the dry ingredients with a dough blender, or something similar.
  • Mix in the Butter Milk.
    • Stir together then kneed with your hands.
      • The moisture at this stage is critical to your turnout. I like moist biscuits, so you want the dough ball to be slightly sticky. It shouldn’t be clumping to your hands but shouldn’t easily let go of your skin either. Adjust to your own preference as you try this amazing recipe time after time.
      • TIP: If its too wet add a little flower and kneed it in. If its too dry add a little more milk or even water and kneed in. REMEMBER: small amounts go far at this time.
  • Lightly flower your large cutting board.
  • Press out the dough ball to about 3/4″ thick
    • Optional: If you like layers in your biscuits- divide the dough evenly and place on top and pat or roll out to 3/4″ again. Repeat for as many layers as you would like.
    • Optional: If you prefer flakey biscuits repeat the above direction – however melt some butter and lightly coat between each layer.
  • Cut out your biscuits, we recommend 2″ rounds roughly.
    • You will have odd shapes left over, these can be fun to cook as they are or kneed into a ball again (if you layered you will need to kneed or you will have layers going every which way) pat out and cut.
    • Optional: At this point you can place on parchment paper and layer your biscuits if need be and freeze them. When ready to cook simply proceed from here. (about 20 min)
  • Lightly grease a baking sheet and place biscuits on it with about 1/2″ between them.
  • Set oven to 400 degrees F (no need to preheat oven for this timeframe) and timer to 20 min. Place biscuits in oven and prepare for some of the best biscuits!
    • You can freeze once baked. To eat simply place frozen biscuit(s) into a toaster oven for about 10 min on 360 degrees F and enjoy.
